For those who are using Gnome Do with Docky theme now in Ubuntu 10.10 that is not possible :(
This is because in Ubuntu 10.10 Gnome Do have been updated to version 0.8.3.1.
Because Docky have become completely separate project, Docky theme have been removed from Gnome Do.
If you want Gnome Do with Docky you need to install older version of Gnome Do.
If you have installed Gnome Do from Ubuntu Software Center then you first need to remove it, to remove it just simply type in terminal:
Now download these 3 packages and install them.
gnome-do_0.8.3.1+dfsg-1ubuntu1_i386.deb (64bit)
gnome-do-docklets_0.8.2-2_all.deb
gnome-do-plugins_0.8.2.1+dfsg-2ubuntu1_all.deb
Now you have Gnome Do with Docky theme again.
Be carfule Update Manager will offer you to update Gnome Do so uncheck it.
